Chocolate Carob Brownies with Chocolate Carob Gnash Icing

We all get a chocolate craving now and then.  So go ahead, have a little.  In fact, I'm making up a big pan of low(er) cal, low(er) carb, healthyish brownies for super bowl (yay, I don't know who's playing, but the commercials should provide water cooler fodder for Monday (or rather Facebook fodder -- after all, Facebook is the water cooler of today, is it not?).

So, give these a try.  At about 150 calories a piece (with icing), they're still less caloric than many store-bought brownies (and much healthier).  Nutrition Facts (click for cals, carbs, fats...)

Wet ingredients:

  • 1/3 cup Canola Oil
  • 1 banana
  • 1/3 cup fat free yogurt
  • 1/3 cup creamer substitute (or almond milk) 
  • 1 tsp honey
  • 1 1/2 tsp vanilla extract
  • 4 eggs
Dry ingredients
  • 1 1/2 cups whole wheat flour
  • 1/2 scoop protein powder
  • pinch of salt
  • 1/2 tsp baking soda
  • 1/2 cup unsweetened cocoa powder
Also
  • 1 1/2 cups granulated sugar
  • 2/3 cup unsweetened carob chocolate chips
  • 2 pieces of Ghiradelli semi sweet chocolate baking bar
  • 1/2 cup walnuts
With a mixer, combine sugar with wet ingredients (most recipes suggest you add one egg at a time, I never have the patience and just mix them all up together without too many tragedies).  In another bowl, combine the dry ingredients (flour, protein powder, salt, and baking soda, coco powder).  Melt 2 squares of semi-sweet baking bar and 1/3 cup carob chips in microwave (about 30 sec to 1 min).  Fold in 1/3 cup carob chips (optional) and nuts (optional).  Spoon into glass baking dish and bake in preheated oven at 350 degrees for about 20 minutes (or until you can poke a knife into the middle and knife comes out clean).  Let cool and frost with icing.

  • 1/3 cup unsweetened carob chocolate chips
  • 1/2 tsp vanilla extract
  • 2 squares Ghiradelli semi sweet chocolate bakaing bar
  • 1/3 cup creamer substitute (or almond milk)
In microwave, melt the chocolate squares and carob chips (about 30 sec or 1 min).  Stir and wisk in vanilla and creamer until a shiny consistency.  Smooth over brownies and let set (about 10 minutes). 

Cut brownies into squares and enjoy
